Cooked Shrimp, Tail-On

Cooked tail-on shrimp is the most common form of cooked shrimp sold in the United States. It is also called ‘Cocktail’ shrimp, and by the acronym, ‘CPTO' .

The product form consists of a shrimp with shell segments 5 through 2 removed, and the 1st segment and tail left on the shrimp. The large intestine is removed with a knife cut. There two common forms, one with the 5
th to 2nd segments cut, the other with the 4th to 2nd segment cut, and the 5th not cut.
